The Fornace de' Medici's project was born with the aim of creating a lounge just outside the gates of Florence, where food and tuscan wines are the key players. The menu is the result of eight years of research, and its essence is rooted in the quality of ingredients and techniques used to enhance the flavors; a gastronomic path that enhances local excellence, where the meat is sourced locally on our estate or on free-range farms and the vegetables come from our organically cultivated farm.

The restaurant's pride is its wine list, which features labels from the most important DOCG and DOC regions of Tuscany. Our Organic Estate

From land to plate, most of the ingredients are grown and produced on the organic farm Le Colline del Paradiso

The family-run organic farm produces vegetables, potatoes, spelt, extra virgin olive oil and ancient Verna and Sieve grains, used for the restaurant's homemade pasta, while the game comes from the hunting reserve that surrounds the restaurant.

Our menu therefore follows the seasonality of the garden.

Guided tasting

This guided tasting takes our guests on a journey to discover the main wine regions of Tuscany. It begins with an explanation by the sommelier and owner about all the main DOC and DOCG regions of Tuscany. Then, our guests can choose from the wine by the glass menu the ones they prefer to taste. Once the wines are served, the tasting begins, with a focus on wine-food pairing and the sensory characteristics of the selected wines.

Price starting from 50 € per person, the tasting includes a gourmet platter; Premium Tasting 60 € per person; Luxury Tasting price upon request.

Questa degustazione guidata porta i nostri ospiti alla scoperta delle principali zone vinicole della toscana, inizia con una spiegazione, da parte del sommelier e proprietario, di tutte le principali doc e docg della Toscana, successivamente i nostri ospiti potranno scegliere dalla carta di vini al calice, quelli che preferiscono assaggiare.

Serviti i vini inizia la degustazione, che viene svolta ponendo una grande attenzione sull’abbinamento vino-cibo e sulle note organolettiche dei vini selezionati.

Prezzo a partire da 50 € a persona, la degustazione include un tagliere gourmet;
Degustazione Premium 60 € a persona;
Degustazione luxury prezzo su richiesta.
